Cooking Steps
STEP 1/8
[Preparing the ingredients]
First, shred the fish cake.
Chop the carrots, shiitake mushrooms, onions, and zucchini.
STEP 2/8
[Making broth]
Add 6 deporis (or anchovies), 5-6 pieces of kelp, and 2-3 pieces of shiitake mushroom base to 1400ml of water.
When the water starts to boil, remove the kelp first.
Leave the depot and the bottom of the shiitake mushrooms as they are, boil them gently over medium low heat for about 10 minutes, and remove them.
STEP 3/8
Add 1 tablespoon of tuna liquid and 1/2 tablespoon of soy sauce to the finished depot stock, and add salt to the rest ^^

[Boiling noodles]
Add a little salt to the boiling water.
When the salt melts, add the noodles and simmer for 3-4 minutes.
If you put 1 cup of cold water in the middle, you can enjoy the chewy noodles ^^
Rinse the boiled noodles several times in cold water and drain them through a sieve.
* The amount of noodles for one person is said to be between 80 and 100g on a scale.

STEP 5/8
[Frying vegetables]
Put a little oil on a preheated pan over medium heat and stir-fry sliced onions and carrots first.
Then add zucchini and shiitake mushrooms and stir-fry lightly.
STEP 6/8
Add long shredded fish cake and sweetly
* If you don't want to stir-fry vegetables, you can put all the vegetables in the broth and boil it ^^
But I think it's better to stir-fry it lightly, so I always stir-fry vegetables Hahaha

Add stir-fried vegetables and fish cakes to the depot stock and bring to a boil.
(You don't need to boil it for a long time because I stir-fried the vegetables beforehand ^^)
STEP 8/8
Put an appropriate amount of noodles in a bowl. Pour in the broth carefully.
