Cooking Steps
STEP 1/4
Soak rice noodles in cold water for 30 minutes. Cut carrots and broccoli into bite-sized pieces, and slice the sweet pumpkin long.
STEP 2/4
Boil the chicken breast and tear it to the grain. Cut bok choy in half and slice shiitake mushrooms and onions thinly. Fine green onion is minced.
STEP 3/4
Boil water, onions, shiitake mushrooms, and bok choy in a pot, add rice noodle sauce and rice noodle, and boil for about 30 seconds more.
STEP 4/4
Place rice noodles on a plate and complete with bean sprouts, lemon or lime.
