Cooking Steps

I'll make a simple one-piece pollack roe ochazuke. You can enjoy the taste of authentic Japanese ochazuke as it is a soup that you have seen and studied in Japan. The most important thing in Ochazuke is to make soup, but it's hard to enjoy the proper taste with only green tea soup.

Please prepare katsuobushi first. Katsuobushi bought from Japan. Two things, one is rougher and thicker, and the other is the thin katsuobushi on the market. You can only use thin katsuobushi sold in Korea.

If you make soup in advance, it's convenient to eat it cold in summer. In this season, I feel very comfortable even if I enjoy it warmly. If you have anchovies again, you can make ochazuke in 10 minutes. Prepare anchovies, kelp, and katsuobushi.

I will tell you the recipe based on the authentic Japanese Ochazuke, so I recommend powdered green tea over tea bags, but if you don't have one, please make it thicker. I think the Japanese tea bag green tea I bought is comfortable and good because it's quite thick.
You can use only one of the two.

Heat 800-1000 milliliters of water.
When I boil it, it's going to lose a lot, so I grabbed enough.

Add anchovies and kelp and bring to a boil

Boil slowly over low heat for 10 to 15 minutes to make anchovies taste good, and take out the foam

When it tastes like soup, add a handful of katsuobushi.

Add the katsuobushi and boil it over low heat for about 5 minutes if you want a strong taste rather than turning it off right away. Then turn off the heat and leave it still for about 10 minutes.

Add hot water and let it boil for about 5 minutes.

Pour green tea into the sauce broth from the katsuobushi and combine them. At this time, I think the ratio of green tea and Katsuobushi anchovy broth is 1:2. You can add or subtract according to your preference.

Prepare salted pollack roe while boiling the anchovies again. One lump is enough for two people, so you can add or subtract according to your preference.
It's good to eat grilled salmon or mackerel on top of your personal preference, or pickled vegetables at home, so you can eat anything on top of your preference.

Cook the pollack roe lightly on medium heat with tongs.

I prepared crispy Japanese pickled vegetables and red pepper powder anchovy furigake. It's better to put grilled seaweed or raw seaweed on top without seasoning.
