Arancini and kimchi tomato sauce made with leftover cold rice (f
It's Arancini, one of the Italian dishes. We need to make risotto while stir-frying rice with broth, but we made it with leftover rice to make it simple. It looks like a rice ball and it's served with tomato sauce. I added kimchi. If you have any special rice dishes or leftovers, try making them.

Cooking Steps
STEP 1/21
Material preparation
STEP 2/21
* peeling tomatoes
- Blanch the skin in boiling water after cutting it in a cross shape
STEP 3/21
- If the skin is lifted, take it out and remove the skin
STEP 4/21
- Chop bell peppers, onions, and sausages
- Chop kimchi and tomatoes into thick pieces
STEP 5/21
- Stir-fry kimchi in a pan with a bit of oil
STEP 6/21
- When kimchi becomes transparent, add tomatoes and stir-fry them so that they can be crushed
Tip. The tomatoes I used were too hard and less hydrating. So I added 2 tablespoons of water in the middle. I crushed some tomatoes with a spoon. Cook according to ingredients. You can adjust the concentration of the commercial sauce.
STEP 7/21
- When the kimchi is cooked, season it with ketchup, sugar, and salt
STEP 8/21
Add or subtract sugar depending on the sourness of the ingredients.
STEP 9/21
Add salt to taste. I've put in two pincers. First, the sauce is done!
STEP 10/21
- Grease the pan a little and stir-fry all the chopped vegetables over high heat
Tip. Stir-fry the onions until they are transparent.
STEP 11/21
- Mix rice and stir-fried ingredients, parmesan powder and pepper in a bowl
STEP 12/21
If there is no parmesan cheese powder, season with salt.
STEP 13/21
- Putting rice in a rice ball mold
STEP 14/21
- Add mozzarella cheese in the middle
STEP 15/21
- Press it with a rice mold to shape it
STEP 16/21
I used a smaller mold than a regular rice ball frame, so I got four.
STEP 17/21
- Beat in eggs and prepare flour and bread crumbs respectively
STEP 18/21
- Dressing in the order of flour, eggs, and bread crumbs
STEP 19/21
- Grease a frying pan and cook the cooked rice until golden brown
STEP 20/21
Turn sides and bake.
STEP 21/21
Put the sauce on the plate and put the cooked rice on top, and Arancini is done!
1. Originally, Aranchini is shaped like a round ball. I made a triangle to make it easier to bake because I used less oil, so you can make it according to your taste. 2. You can use commercial tomato sauce instead of the sauce I made. 3. It also has tomato ketchup, so the tomato taste is stronger than the kimchi taste. If you want more kimchi, try adjusting the amount of tomatoes and ketchup.
