STEP 1/8
First, slice the sour kimchi, and prepare 1/2 green onion and 1 red pepper diagonally.
Slice 1/4 onions and 1 shiitake mushroom.
Rip the enoki mushrooms with your hands ^^

Add 3 deporis, 3 pieces of kelp, 1,000ml of water, a handful of dried shrimp, and 1 bottom of shiitake mushroom.
Remove the kelp before the water boils.
When the water boils, lower the heat to medium and simmer for about 15 minutes, then sift out the ingredients ^^

Stir-fry 2 tablespoons of perilla oil and sour kimchi lightly in a preheated pot over medium heat.
Then add 1 small spoon of sugar and 1/2 large spoon of red pepper powder and stir-fry until the kimchi is out of breath.

Pour in 700ml of broth.
When the soup boils up, add 1 tablespoon of tuna liquid, 2 tablespoons of kimchi soup, 1 tablespoon of mirin, and 1/2 tablespoon of minced garlic and simmer gently over low heat for about 15 minutes.
After 15 minutes, taste it and add some salt if it's a little bland.

In the picture, the tuna liquid is a half-sized drink, but after that, I added an additional half-sized drink.
If you don't have tuna liquid, add 1 tablespoon of soy sauce. :)

Add sliced onions, udon noodles, shiitake mushrooms, and enoki mushrooms one by one, and boil them.
(If you cut 1-2 cheongyang peppers, you can eat more spicy and spicy kimchi udon.)^^)
