Chop the ham, carrot, onion, and potato.

Soak the shredded potatoes in cold water for 5-10 minutes to remove starch and drain them through a sieve.

Stir-fried ham and potato salad is best eaten as soon as you make it, so it's hard to eat it once it's in the refrigerator.
In that case, it's good to make fried rice with leftover ham and potato salad, rice, oyster sauce, and sesame oil. :)
