Mix minced beef with pepper and salt.

Cut one eggplant in half and slice it lightly.

Stir-fry eggplants over medium heat in a dry pan. Remove the eggplant when it is lightly browned back and forth.

Put 2T of oil and a handful of chopped green onions in a pan and make green onion oil over low heat.

When the scallion flavor comes up, put it on high heat and stir-fry it for about 1-2 minutes.

Next, add the eggplant and mix it well

Add 1.5-2T of soy sauce and stir-fry for about 2-3 minutes.

And if you add Cheongyang red pepper and stir-fry it one more time, it's done. Adjust the salt for the lack of seasoning.
1. You can put it on top of the rice and eat it with rice.
2. Stir-fry until you add Cheongyang red pepper and cook rice in an electric rice cooker to make beef eggplant rice :) If you cook beef eggplant rice, please hold less water than usual.
