STEP 1/10
Cut the chicken into bite-sized pieces.
STEP 2/10
Add salt, pepper, curry powder, and soju to this. (Soju can be omitted)
But if you put in the mirin, it will burn when you fry it. Don't put it in.
STEP 3/10
Add the frying powder (2) to the seasoned meat and mix well.
(It moisturizes and softens the inside.)
STEP 4/10
Now, add a little water to the starch powder (5) and prepare the batter.
STEP 5/10
Mix the seasoned meat in the batter.
STEP 6/10
Add frying oil and fry at 190 degrees for about 7 minutes.
(Every house has different sizes and different temperatures. Fry for 9 minutes on low heat.)
STEP 7/10
Remove fat from kitchen towels from well-fried meat.
STEP 8/10
Now add oligosaccharide (8) to mother sauce (4) and bring to a boil.
Mother Source -
2 cups of soy sauce, 2 cups of water, 1 cup of sugar, 1ts of pepper, 1/4 cup of garlic, 1 cup of onion, 2/3 cups of pear (based on 10 servings-measuring rice bowl)
STEP 9/10
Mix the boiled sauce in the fried chicken.
STEP 10/10
Originally, I put fried chicken on top of the boiled sauce, but I turned it upside down to see how much it was.
Never add cooking wine to season. It's easy to get burnt when frying. The temperature point is different because it's seasoned. It's better to add the sauce after boiling.
