Making Stir-fried Lotus Roots, Easy Side Dish
The unique texture of lotus root that makes you feel good and crunchy. It is stir-fried with sweet and salty seasoning to add flavor. Pumpkin seeds are added, so I keep picking them up because of the different texture and savory taste.

  • lotus root
    740g
  • pumpkin seeds
    1/2cup
  • Soy sauce
    3.5T
  • Sugar
    1T
  • grain syrup
    1T
  • cooking wine
    2t
  • kelp broth
    4T
  • crushed garlic
    1t
Cooking Steps
STEP 1/6
Slice the peeled lotus root as thin as possible.
STEP 2/6
And soak it in rice water for 10 minutes to remove the remaining smell.
STEP 3/6
Grease a preheated frying pan with 1T of cooking oil, add lotus root and stir-fry over high heat for 2 minutes.
STEP 4/6
Add soy sauce, cooking wine, sugar, and kelp water and stir-fry it for 2 more minutes on medium-low heat.
STEP 5/6
Add pumpkin seeds and minced garlic and stir-fry until the soup boils down. (About 3 minutes?)
STEP 6/6
Lastly, add grain syrup and stir it over high heat for a minute or two.
It's 2 to 3 meals for a family of 3 people. Cup = Paper cup, based on T = 15cc and t = 5cc.
