Wipe the abalone cleanly between the brushes.

Soak it in hot water for about 5 seconds and then use a spoon to float from the bottom to separate it well.

Now separate the intestines from the flesh.
Remove the abalone teeth as shown in the picture.
Remove the teeth with a knife.

Now, make a diagonal deep cut over the abalone.
Marinate it with a little olive oil and salt pepper.

Chop the mushrooms and blanch the broccoli with a pinch of salt.

Prepare the eggplant by cutting it sideways.
Put a piece of butter in a frying pan and bake abalone when it melts.

After the abalone is baked, stir-fry the mushrooms and eggplants with a little salt and pepper in the remaining oil.

Make the sauce with soy sauce (4), mirin (4), garlic 3tol, scallions, 1/4 onions, sugar (1), and 2/3 cups of water
When it boils down to half, add starch syrup (1) and dissolve starch water (2) to make a concentration.

Put a little vinegar in hot water and sterilize the abalone shell.
Now, if you put the plating on the abalone shell, put the sauce, and garnish, the abalone steak is done
Abalone becomes tough when grilled for a long time. Don't bake for too long, but when the butter is slightly cooked, it's good to bake medium. I used teriyaki sauce, but it also goes well with balsamic sauce and internal sauce.
