STEP 1/11
Blanch bean sprouts and soak them in cold water. That's how you can maintain a crunchy texture.
STEP 2/11
It's a frozen sliced octopus. Even though it's a cut octopus, it's not just a leg, but it's all in with the internal organs removed. And above all, it's incredibly plump. I think he was a huge guy. Add thick salt or flour to the octopus and rub it once in a while to remove foreign substances along with slippery mucus.
STEP 3/11
Put salt in boiling water and blanch the octopus. There are a lot of octopus, so I prepared to eat one with suksuhoe and the other with stir-fried octopus. I blanched the food completely and blanched the stir-fried octopus slightly.
STEP 4/11
First, drain the water from the boiled octopus for stir-fry.
STEP 5/11
It's blanched more than stir-fried octopus!! I blanched stir-fried octopus for about 4 to 5 minutes, and blanched octopus for raw fish for 7 to 8 minutes. Since the octopus is thick, I gave more time to blanch it. Blanching time can vary depending on the size of the octopus.
STEP 6/11
We used natural seasoning broth for the broth, but you can also use beef bone broth or anchovy kelp broth. Add red pepper powder to the broth and a lot of minced garlic.
STEP 7/11
Add sugar, green onions, dark soy sauce, and fish sauce to it and bring to a boil. After boiling, add starch water. Mix well and boil until thick.
STEP 8/11
Add the slightly blanched octopus and stir-fry it so that the sauce can soak in. The starch water is already in it, so the more you stir-fry it, the thicker the concentration becomes. The seasoning gets wrapped around the octopus. And most of all, you can make stir-fried octopus very simply.
STEP 9/11
The stir-fried octopus that looks like it's going to be really spicy just by looking at it is done. Turn off the heat and mix with a drop or two of sesame oil.
STEP 10/11
Remove the bean sprouts that have been blanched and soaked in cold water, drain them, and place them on a plate.
STEP 11/11
And put a lot of stir-fried octopus on one side. Sprinkle the green onions on top and sesame seeds to complete. Stir-fried octopus is done.
