Cooking Steps
STEP 1/9
After removing the clams, wash them clean by rubbing the shells together.
STEP 2/9
Please prepare garlic and pepperoncino.
STEP 3/9
Add 1/2 tablespoon salt to 1.5L water and simmer for 7-8 minutes. (2 minutes less than packaging time, al dente)
STEP 4/9
Drain the boiled noodles on a sieve and leave about 2 cups of noodles.
STEP 5/9
Place 4 tablespoons of olive oil in a heated pan.
Reduce heat to medium, add sliced garlic and stir-fry until flavored.
STEP 6/9
Turn back to high heat and add clams and peperoncino.
STEP 7/9
Pour in the white wine (or rice wine) when it boils.
STEP 8/9
When it boils again, cover and wait for the clams to open.
STEP 9/9
When the clams start to open their mouths, open the lid and stir-fry the noodles.
Add a little bit of noodle water and make the soup small.
You can change it to clams or ramie clams. Mosquito clams taste the best.
