How to make Jongwon Baek gamjatang by Chef Baek
It's a dish that I've already cooked, but it's the Pork Back-bone Stew version.

Ingredients
  • Soybean paste
    1spoon
  • red pepper paste
    1spoon
  • crushed garlic
    1spoon
  • Red pepper powder
    3spoon
  • Korean style soy sauce
    1/2cup
  • perilla powder
    5spoon
  • fish sauce
    3spoon
Cooking Steps
STEP 1/9
First, cut the back ribs according to the number of pieces.
STEP 2/9
Add enough water and half a cup of cooking wine.
STEP 3/9
Now, take out the pit bull from the back ribs, and do it until the bones are completely bleached.(approximately 10 minutes)
STEP 4/9
Rinse the boiled back ribs in cold water
STEP 5/9
Cut the dried radish greens into bite-sized pieces.
STEP 6/9
Put back ribs in a pot and 12 cups of water
Add soybean paste 1, red pepper paste 1, ground garlic 1, red pepper powder 3, half a cup of soy sauce (please adjust this), and fish sauce 3.
Add some ginger powder to this. (It's good for removing fishy smell.)
Add 5 spoons of perilla powder.
STEP 7/9
Now, as you boil it, peel the potatoes and put them on the side.
STEP 8/9
Please add dried radish greens so that the seasoning can soak.
STEP 9/9
Boil it for about 50 minutes, and when it's cooked for about 40 minutes, chop the green onions, slice the perilla leaves, and put it on top.
If you squeeze it, please replenish the water in the middle.
If you enjoy it, it's done!
I season with salted shrimp rather than fish sauce, and this is also good.
I think salted shrimp is better than salted fish. Add the soy sauce while tasting it.
