Sukuma Wiki (fried kale)
Sukuma wiki is a traditional Kenyan food.
Sukuma (Kale) = Push
Wiki = a week
Kenya eats Sukuma, which is easily available to ordinary people regardless of the season.
Also, it is called Sukumawiki because you eat Sukuma, which is easily available, all week long, but believe it or not.
I usually eat it for juice or ssam in Korea, but I eat it as a staple food in Kenya. Also, it is rich in vitamins and tastes better than I thought, so I make kimchi like perilla leaves, blanch it, dry it, and make vegetables.
Kenyan food seems simple, but it's more tricky than I thought because it tastes completely different if it's not cooked according to the recipe.
