STEP 1/3
Boil the octopus, remove the legs, and boil the body part again to cook it thoroughly. Then, you can cut it using scissors, or if you are worried that it may spoil while moving, no matter how fresh it is in summer, you can take out the body, cut it, remove the intestines, and add it again to boil octopus soup.
STEP 2/3
There is a lot of boiled octopus water, so put it in an earthen pot, cut the body into pieces, and boil it with radish, chives, and minced garlic that give a cool taste. When you boil octopus, you can add radish, chives, and onions and boil them together. Then the radishes will be fully cooked. But if you do that, the life of the broth can be shortened, so I only put octopus in and boiled rice wine. Store the remaining boiled octopus water in the refrigerator and use it as a broth for 1-2 days. Simmer gently over low heat until radishes are transparent. If you want the radish to cook easily, you'd better cut it into smaller pieces and put it in.
STEP 3/3
I seasoned it with fish sauce. Or you can use salt. In the case of soy sauce, the color of the soup changes, so I don't recommend it, but it's best to use salt or fish sauce. Octopus soup is ready. You can add some pepper to your taste~~~~
