I'm not going to throw away the blanched water by blanching the eggplant and making soup with a net
Rose used rice~~~
It's called rice water, but it's very light because it's the third water
But I think it'll taste more savory than bottled water~~~
When the water starts to boil as if it's boiling, put 2/3 of the salt and blanch the eggplant~!~~
Blanch the eggplant with a cross and soak it in cold water for 30 seconds
Press it down a little and drain it!~~
Blanch the chives in and out, rinse them in cold water, and drain them!~
Don't throw away the boiled eggplant water and use it as water kimchi soup

Rip the blanched eggplant by hand and shred the carrot into 5cm long pieces
I cut the chives into the same size
Add all the seasoning and mix the eggplant, carrot, and chives gently
You can even eat it as if it's seasoned

It's even better if you add a bit of sesame oil and mix it~~

I added sea salt to the eggplant
I didn't season it separately, but the soup was right~~
