I remember when I was in school, the lunch box was mostly soy sauce. Back then, the soy sauce was really big. As I get older, I sometimes think of bean-jaban as a food of memories. Soft, sweet, and salty... And I made savory soy sauce.

Cooking Steps
STEP 1/5
When you cook soft black beans
I'd like to soak it overnight.
STEP 2/5
Soak kelp and shiitake in 7 cups of water.
You can use water, but it tastes better if you use kelp water.
STEP 3/5
Pour the soaked beans into the kelp water.
I poured 6 cups of kelp water and it was soaked.
Cut it over high heat, reduce it to low heat, and boil the beans well.
As it cuts, it removes the foam,
Turn it off over low heat for about 20 minutes to avoid overflowing bean water.
STEP 4/5
Add dark soy sauce, house soy sauce, and sugar and start to cook.
Put it on low heat for about 30 minutes
If you think there's not enough soup, please add kelp water.
STEP 5/5
When the beans are soaked, add 3 spoons of honey and boil them down.
If you think there's too much soup, blow off the water over medium heat.
If the soup is too salty, add sesame seeds and finish.
If you want a soft braised bean, soak the black beans overnight.Starch syrup and oligosaccharide are good, too.
