My husband and I like spicy food and cook it often, but my son can't eat spicy food yet, so even if he cooks one dish I always make two versions (spicy and not spicy). I try to do that every day, but I get exhausted every time I cook, right? crying So today, I made braised chicken leg soy sauce that the whole family can eat together.

Cooking Steps
STEP 1/11
First, wash the chicken legs under running water.
While washing, remove the fat on the chicken skin slightly.
(If you don't eat chicken skin, remove the chicken skin as well.)

That way, it cooks quickly until the inside and the seasoning gets soaked well, right?

Get rid of the smell of chicken legs!
Add 3 tablespoons of mirin, 1 tablespoons of minced garlic, 1 tablespoons of dried rosemary, and pepper and mix well.
(You don't have to add rosemary.)
STEP 4/11
Add the seasoning made above to the cut chicken, sprinkle evenly with salt, and let it marinate for about 15 minutes.

If you mix 2 tablespoons of all-round flavor soy sauce, 1 tablespoons of dark soy sauce, 2 tablespoons of mirin, 1.5 tablespoons of minced garlic, 2 tablespoons of oligosaccharide, and pepper well, the soy sauce is done!

The multi-taste soy sauce is Jongwon Baek's multi-taste soy sauce.
If you don't have multi-tasting soy sauce, you can replace it with dark soy sauce.

Add the marinated chicken to boiling water and simmer over high heat for about 20 minutes.
After 20 minutes, poke the innermost part of the chicken leg with chopsticks and boil it a little more if blood comes out, and if it doesn't come out, drain it with a sieve.

If sufficiently drained, place the chicken legs in a preheated pan with plenty of cooking oil and bake until golden brown.
(You can skip this part and boil it down with soy sauce.)

Add soy sauce and simmer over medium-low heat.
(You must boil it down over medium-low heat because the sauce burns easily when you wash it.)
