Nagasaki Chashu Ramen
After enjoying Chashu Ramen in Osaka, I started to like Japanese Ramen. I wanted to buy it often, but it was a bit burdensome because of the high price. So I came up with a way to eat it often at home, which is delicious and a little cheaper.

Cooking Steps
STEP 1/16
This is the material I introduced earlier. Please refer to the picture.^^
STEP 2/16
I'm going to make char siu with pork forelimbs. First, you have to drain the blood from the boiled meat. Soak in cold water for an hour.
STEP 3/16
Trim red pepper, chives and enoki mushrooms while the blood is drained.
Cut red pepper and chives 1cm apart, and cut enoki mushrooms into 3 pieces. Only the head of enoki mushroom goes into the ramen. Put the rest in the meat broth.
STEP 4/16
1) Green onion: Please prepare one green onion.
2) Onion: I used half an onion.
3) Whole garlic: I added 4 whole garlics, you can add more.
STEP 5/16
Add 3 spoons of soybean paste with a dad's spoon.
STEP 6/16
The above-mentioned green onions, onions, whole garlic, 3/2 of enoki mushrooms
Add pork and simmer for 1 hour.
STEP 7/16
Boil the egg in hot water for 8 minutes while the meat is cooked.
STEP 8/16
When the meat is cooked, cut it into 2cm thick pieces.
STEP 9/16
The thickly sliced pork forelimbs are grilled in a pan without oil and boiled together with 3 spoons of prepared commercial pork seasoning sauce.
STEP 10/16
Bake the meat until golden brown so that the seasoning is evenly soaked.
Please be careful because too much fat can cause oil to splatter.
STEP 11/16
Now I'm going to cook ramen using Nagasaki Jjamppong Ramen.
Water: 2 paper cups / Broth: 3 spoons of ladle
STEP 12/16
The ladle is about this size.
Meat broth becomes the base and makes it even more delicious.
STEP 13/16
When the water and broth are boiling, add flakes and powder
Add ramen noodles and boil them over high heat.
STEP 14/16
Add the remaining 3/1 of enoki mushrooms to the ramen.
STEP 15/16
Take a handful of bean sprouts and wash them over cold heat.
When the ramen is finished, put vegetables, meat, and soft-boiled eggs on top of the garnish, and the Nagasaki Chashu Ramen is complete.
STEP 16/16
You can add garnish like in the picture.
Now make char siu ramen at home and try it! It's really good!!
1) Please prepare pork front leg meat for char siu ramen. Personally, rather than meat I think it looks better with more fat. 2) Add Cheongyang red pepper or red pepper powder when the ramen is greasy because of the meat's oil. 3) If you prepare extra bean sprouts and put them in between, it tastes better.
