Hairtail's silver scales are hard to digest

Some people say it doesn't matter when you grill it.

Rinse quickly under running water and wipe off the water.
Make cuts on the body of the hairtail diagonally
Sprinkle thick salt back and forth to season.

Pour enough olive oil in the pan
Put the hairtail on top.

Brown the surface over medium heat,
Cook the insides.

Don't flip it often
If it looks like it's cooked perfectly
Flip it over and cook the back side
without making a mess of it up
It's baked beautifully.
