You have to soak dried shiitake mushrooms in water first. If you soak it for about 20 minutes, it will soak quickly.

Squeeze the water out of the soaked shiitake mushrooms and prepare them. That's how you don't get any moisture while frying. Squeeze the water tightly to make it firm. Then you can't stir-fry mushy mushrooms.

Put perilla oil on a heated pan. Add shiitake mushrooms and minced garlic and stir-fry them. It's easy and simple to stir-fry. The scent of shiitake mushrooms is alive and the texture is good.

Add chopped green onions, please. If you add a small amount of minced garlic and chopped green onions, the scent of shiitake may remain. If you add too much garlic and green onions, it can damage the scent of shiitake.

And you can season it with salt. Because it's fried in perilla oil, you don't need to add sesame oil or put perilla oil again, but the scent of perilla oil is naturally cut off in the elevation.

Lastly, add a lot of crushed sesame salt and stir-fry while mixing well. It's stir-fried with perilla oil, so it's dry and not greasy.

After drying dried shiitake mushrooms, squeeze the water and stir-fry them in perilla oil, and the soft shiitake mushroom stir-fry is done. It feels like it's grilled.
