I've been eating kimchi for a while and I really want to eat fresh cabbage kimchi, right? So I bought a cabbage leaf from the mart on my way home from work yesterday and made fresh cabbage for the first time in a long time.

Cooking Steps

After making a cross cut at the bottom of the cabbage
Split it with your hands and divide it into four parts.

Cut cabbage leaves into bite-sized pieces.
(You can rip it with your hands.)

Then, sprinkle a handful of thick salt evenly on the cabbage and sprinkle a cup of water to soak it for 3-4 hours.
Mix it once or twice so that the cabbage is seasoned evenly
(You can make salt water and pickle it.)

After 3 hours, the cabbage was somewhat out of breath.

Rinse the pickled cabbage a couple of times in running water and drain it through a sieve.
Then, taste the cabbage leaves and stems.
At this time, if the cabbage is pickled a little salty, reduce the amount of fish sauce, and if it is bland, add more salt or fish sauce ^^
I marinated it not salty or bland and added the seasoning according to the recipe above.

Put the chopped chives into the pickled cabbage and add half a cup of red pepper powder

Then add 1 tablespoon of minced garlic, 2 tablespoon of plum extract, 4 tablespoon of fish sauce, and 2 tablespoon of sugar and mix well.
