Sweet pumpkin + red bean sticky rice pancake
I heard it's good to eat a lot of red beans in spring, so I bought a lot of them and boiled them in advance and froze them in the freezer, but just in case.. And I also bought sweet pumpkin. There are many foods that are made with sweet pumpkin and red bean because they go well together. I wanted to eat something ricey with both sweet pumpkin and red bean in it, so I made glutinous rice pancakes in the middle of the pancake I came up with from Pumpkin Tarakjuk.

The pumpkin was small, but it weighed more than 1.2kg, so I cut it in half, wrapped it, and turned it upside down so that the tip was down and returned to the microwave for 6 minutes.

You can put one in at a time and cook it, but it's not bad to cut it in half like me, take out the seeds, and cook the other one while you scoop out the flesh with a spoon.

Mash the pumpkin flesh roughly with a spoon, add glutinous rice flour (dry), sugar (or honey), salt, and then add excessively warm, just before it gets hot?, pour the milk and mix it like a dough. Salt is meant to enhance the sweetness, but it's strangely tasteless if you don't put it in. Something hollow and sweet? Please make sure to put it in.

When the dough is roughly mixed, add red beans. If you take out red beans according to your preference, it doesn't matter much with the dough condition. The kids don't like it because it's not red bean paste. -.- I mashed it roughly on purpose, but if it's ripe enough, you can just put it in.

This is the last step to fix the condition of the dough. If it's too sticky, it won't flip over and it keeps tearing. So I'll scoop it out with a spoon and when I gently drop it, it'll stick to the spoon and it's good if it doesn't come off? It is difficult for the pumpkin size and the amount of flesh to be exactly the same, so please adjust the toughness according to the amount of pumpkin.

Pour cooking oil on a heated pan and fry it like a pancake. It feels similar to hotteok when you fry it.

It tasted light because I added honey, not sugar, but if you think it's not sweet enough, try it with maple syrup. If you don't have it, honey or grain syrup is good too The size is jagged, so 13 came out. I think you'll get about 12 if you match it to the size of hotteok.
