#Making stewed shiitake mushrooms using dried shiitake mushrooms
I made it so that you can eat dried shiitake mushrooms for a long time by braising them in soy sauce. Dried shiitake mushrooms are boiled shiitake mushrooms that are boiled first and then boiled in soy sauce broth.

Cooking Steps
STEP 1/14
Wipe dry shiitake mushrooms clean with a towel. Then soak it in water for about 30 minutes. Because it needs to be soaked. And that fire, shiitake mushroom, we don't throw away the water. I'm going to use it as a broth later.

Remove the soaked shiitake mushrooms and drain them.

Shiitake mushrooms from dried shiitake mushrooms are used as boiled broth. Put the shiitake mushroom and water in the pot. If you use this water, it will give you a stronger flavor of elevation and it will taste better.

Put the soy sauce in here. The gas light is not on.

We're going to boil down the soy sauce after putting all the ingredients in. Add minced garlic.

Add rice wine to control the smell. If you don't have rice wine, add cooking wine.

Add a bit of pepper. I think we need to add some sweetness. Add starch syrup or honey with sugar. The sweetness is sugar + starch syrup.

If the seasoned soy sauce is made like this, turn on the heat and boil it over a short heat first.

When it boils up, add chives or green onions and boil them down over low heat. Cook until the amount of soy sauce is reduced by 1/3 of the total. I haven't added shiitake mushrooms yet.

If the soy sauce is reduced and boiled down properly, add the soaked shiitake mushrooms and mix them well. That way, the soy sauce will be absorbed well. The current state of the fire is low heat.

Boil the soup over low heat as much as possible until it becomes small. Until the shiitake mushrooms are brown enough. And also shiitake mushrooms so that they are well be seasoned.

Add sesame seeds in the middle to give it a savory taste. Mix it well. And then boil it down again.

The soup boiled down completely. If you want a spicy taste, mash dried peppers, red pepper seeds, or mash and mix them together to make spicy and salty shiitake mushrooms. It's finally boiled down. Turn off the last heat and turn the sesame oil around. Then, braised shiitake mushrooms are done.

Put the steamed shiitake mushrooms on the plate, put the chopped chives on it, and sprinkle a little sesame seeds to complete. It's very delicious if you eat it with salty and sweet rice.
