STEP 1/28
Fast frozen raw shrimp sold at the mart!
I used frozen shrimp because I heard that it was easy to reproduce germs if I made soy sauce shrimp with live shrimp, but it was frozen quickly, so it was like raw shrimp when it was defrosted
Choose the medium and low shrimp, not too bent at the waist. The sauce is too big to cut well. I choose a bright and fresh color.
STEP 2/28
Put the raw shrimp on the cutting board.
STEP 3/28
Prepare scissors.
Remove the head horn sticking out above the shrimp's head with scissors, and cut or remove the beard with scissors.
STEP 4/28
Scissors are more comfortable and faster than knives
STEP 5/28
In the same way, cut the water gun on the shrimp's tail with scissors.
STEP 6/28
Cut it out like this.
STEP 7/28
If you use a toothpick and stick it in the second to third bars such as shrimp, you can take out the intestines like that. If you tear it slightly, grab the intestines, and pull it slowly, it comes out. There are shrimps with no intestines, so you only need to remove what you see.
STEP 8/28
The intestines are gone.
STEP 9/28
If you press the shrimp's head like this, the intestines on the head come out. If you want a clean taste without a dry taste later, it's better to squeeze it out. The fishy taste is also eliminated.
STEP 10/28
When the shrimp is finished, pour half a bottle of soju and marinate the shrimp for about 30 minutes.
It's to catch the fishy smell.
Turn it over from time to time. It not only brightens the color of the shrimp, it's disinfected, but it also catches the smell
STEP 11/28
Get the pot ready
Pour 1 cup of soy sauce, 1.5 cup of water, and half a bottle of soju.
STEP 12/28
Add 1T of sugar.
STEP 13/28
Add 10 pieces of garlic.
STEP 14/28
Cut the onion into 4 pieces and put it in
STEP 15/28
Add green onion in 3 pieces
STEP 16/28
Add the cheongyang pepper and red pepper
STEP 17/28
I'm going to put in the pepper twig
STEP 18/28
Cut the ginger into appropriate sizes
STEP 19/28
Add 2 pieces of kelp.
STEP 20/28
And then boil it
STEP 21/28
And the most important part here!
Make sure to cool down the boiled soy sauce!!!!
Otherwise, the shrimp will be cooked
Boil the soy sauce and pour it when it cools completely
STEP 22/28
Glass containers are sterilized with hot water
STEP 23/28
Use a kitchen towel to dry the shrimp in soju
STEP 24/28
Put it in a glass bottle one by one.
STEP 25/28
Add the cooled soy sauce
And let it ripen in the refrigerator for 3 days.
STEP 26/28
After ripening for 3 days, pour soy sauce again and bring to a boil. Then pour the cooled soy sauce again and eat it two days later.
STEP 27/28
This is what soy sauce shrimp looks like on the third day.
STEP 28/28
And two days later, the soy sauce shrimp aged for a total of five days.
1. Boiled soy sauce must be cooled and put in. Otherwise, the raw shrimp will be cooked.
2. Garlic and onion ingredients can be omitted, but soju and ginger seem to be the most effective in catching the fishy taste of shrimp.
