A bowl of tuna eggplant rice for people who eat alone
Nutrition-filled eggplant rich in anthocyanins... It's a vegetable with likes and dislikes, but my family likes it, so I often eat eggplant dishes, but there are some eggplants from my parents, so this time I made it with a bowl of food, not a side dish. It is a tuna eggplant rice made by picking a can of tuna with a savory taste and stir-frying it with eggplants. It is rich in nutrition and does not need any other side dishes, so it is good for an elegant meal for people who eat alone.

Cooking Steps
STEP 1/7
Tuna cans drain the fat. This tool makes it easy and good to remove the oil from the can. Or you can drain the fat in a strainer.
STEP 2/7
Cut the eggplant in half lengthwise and cut it into half-moon slices. Cut the onions in half and chop the chilies and green onions.
STEP 3/7
Pour 1/2 mug of water into 2 tablespoons of starch and stir well.
STEP 4/7
Stir-fry onions in a pan heated over medium heat. When the onion color becomes transparent, add eggplant and stir-fry. When the eggplant is half-cooked, stir-fry the tuna.
STEP 5/7
Add oyster sauce, soy sauce, and oligosaccharide and stir-fry them. When almost done, pour the starch water.
STEP 6/7
Mix evenly and when thickened, turn off the heat and mix well with chopped Cheongyang red pepper, green onions, and sesame seeds. If you don't like spicy food according to your preference, you can skip peppers.
STEP 7/7
It's a bowl of tuna eggplant rice filled with eggplant that I always ate as a side dish. The ingredients are simple, but the taste is pretty good.
