It's good to boil bean sprouts while it's cooked and boil them separately for crunchy texture. Drain blanched bean sprouts in a sieve. When boiling bean sprouts, if you boiled them without covering them from the beginning, keep them open. Conversely, if you have started boiling with the lid on, open the lid after the bean sprouts are fully cooked. That way, it doesn't smell fishy.

Please use mushroom water when you cook rice. You can eat rice that smells like mushrooms. And when you use bean sprouts after blanching, you can fully feel the crunchy texture. When cooking rice, you can add bean sprouts and mushrooms together, but since water comes out from bean sprouts and mushrooms, the rice can get tough.
