Chop onion, carrot, red pepper and green onion.

Slice 2 eggplants thickly.
STEP 3/6
Beat in 3 eggs with a pinch of salt. Add chopped vegetables and mix well.

Put eggplant in a sanitary bag and mix well with flour or 2T flour.

Place flour-coated eggplant in pan.

Bake it on medium-low heat until golden brown.
1. Please use various vegetables in the refrigerator.
2. If the flour is too thick, it won't coat well with egg wash, so gently pat it before applying egg wash.
