Soba broth with noodles. ^^
The heat wave for nearly a month left me with body aches because of the earthquake^^;; So last week, Mrs. Cha (Cha Seung-won) made buckwheat soba broth and made cold noodles with noodles, and I thought it would be so cool and delicious that I also made it and ate it^^

Cooking Steps
STEP 1/10
The kelp prepared like a picture in 2.5 liters of water is not in the picture of anchovy radish green onion root, but natural powder (you can use it for sale) If you don't have it, you can pass^^) Boil about 20 whole peppers for about 15 minutes, then dry the kelp and boil it for about 15 more minutes on medium heat ^^....Don't forget to remove the foam from the broth^^
And when you boil the broth, you season it before it boils ^^....I like clean and light broth, so I season it with salt ^^....If you want to enjoy the taste that lingers in your mouth for a long time, you can reduce the amount of salt and season it with soy sauce ^^...The broth boiled like this cooled down and I left it in the refrigerator for more than 4 hours ^^....So it takes more than two hours to make it. ^^ ... With this broth, it's too easy to cook noodles quickly^^
STEP 2/10
Since the broth is buckwheat soba, I ground the radish with a bit of garnish and squeezed the water out^^ I like wasabi but I don't have wasabi at home ^^...So, I prepared a lotus flower^^
And there was once a myth that cucumbers and carrots don't go well together. ^^..Cucumbers are water-soluble vitamins, so they dissolve in water, and carrots are fat-soluble, so they are not absorbed well. ^^...But if you take these two together, the fat-soluble cucumber vitamins, which can be dissolved, are tightly held in carrots, and the cucumber-soluble carrot, which is difficult to absorb, makes it easier for the cucumber-soluble, which delivers very good nutrients to your body^^
STEP 3/10
And I'm going to blanch the bean sprouts^^
When I blanch bean sprouts, I mix plum extract and soju 1:1 and ferment them at room temperature for 10 days^^
But you don't have it ^^...Then pour a glass of soju and blanch it with fishy water, and blanch it much more crispy than when you just blanch it^^
STEP 4/10
Blanch bean sprouts first and boil noodles in dried water^^
I'm going to eat a dish, so I boiled 3 handfuls^^
STEP 5/10
Roughly dry in running water
STEP 6/10
I'll take them out in ice water, and I'll take them out with bean sprouts^^
If you mix it with bean sprouts, the bean sprouts will be chewed and the noodles will be soft, making it feel good^^
STEP 7/10
If you pour cold broth in the refrigerator for more than 4 hours and float the ice...
STEP 8/10
Oh! The cold noodles are done just by looking at them^^

If you eat raw sesame leaves and sesame seeds made with the recipe, you'll get a great combination^^
This perilla leaf side dish surprisingly goes well with noodles more than kimchi ^^... especially for ramen ^^
STEP 10/10
With young radish kimchi and cabbage kimchi, I gained strength after eating this^^
