  • peperoncino
    2~3ea
  • olive oil
  • Fusili

  • Parmesan cheese
  • Peta cheese

Cooking Steps
STEP 1/6
Divide eggplant lengthwise into quarters and salt.
After marinating for about 20 minutes, squeeze the water out.
STEP 2/6
Season boiling water with salt (taste it and season it to taste salty), then boil the pasta noodles.
Don't throw away boiled noodles!
STEP 3/6
Stir-fry onions in a pan covered with olive oil.
STEP 4/6
Add eggplant and pepperoncino and stir-fry together. (Cut pepperoncino into small pieces.)
STEP 5/6
Cut the tomatoes and stir-fry them together.
Then add 1 ladle of boiled pasta water to match the concentration of the sauce.
STEP 6/6
Add noodles and season with salt.
Put it on a plate and put basil leaves, parmesan cheese, and feta cheese if you have one.
Basil powder is good, but it's even better if you add fresh basil leaves.
