Uevos Lancheros
Uevos Lancheros, one of Olive TV's popular chef Raymond Kim's best recipes, is a favorite brunch menu in Mexico. The combination of crispy tortilla and soft black bean paste is unique. It goes very well with cold beer or soda.

Cooking Steps
STEP 1/4
Make a cross cut at the bottom of the tomato, blanch it slightly in boiling water, cool it in cold water, remove the skin and seeds, and cut it into large pieces. Chop the onion and garlic thickly, and chop the jalapeno thickly after removing the seeds.
STEP 2/4
Grind tomatoes, onions, garlic, and jalapeno finely in a food processor, then mix chopped parsley, chopped coriander, salt and pepper to make salsa sauce.
STEP 3/4
Drain the canned black beans, grind them finely in a blender and season them with butter, salt, and a little pepper.
STEP 4/4
Heat the tortilla in a pan or microwave and spread the ground beans evenly. Add fried eggs and sprinkle salsa sauce to complete.
