Cooking Steps
STEP 1/5
Sieve flour, almond powder, and baking powder. Spread a little butter (outside portion) on a madeleine pan, sprinkle flour (outside portion) evenly, shake off the excess flour, and place in the refrigerator. Preheat the oven to 175.

Place butter in a skillet and simmer over medium heat until browned. When cooled, carefully pour it into a large bowl and filter the sediment on the floor.

Beat eggs in a bowl, then add sugar and whisk until completely dissolved.

Add honey, sifted powder, warm milk, and citron zest to 3, mix evenly with a rubber spatula, add melted butter, and mix it again to complete the dough. Mature the finished dough in the refrigerator for more than 30 minutes.
STEP 5/5
Put the dough in a piping bag, fill it in a madeleine pan, and bake it in the oven for about 10 minutes. Remove from the mold, turn it upside down, cool it enough, and sprinkle sugar powder to decorate it.
