Soft tofu lotus root chip salad

Cooking Steps
STEP 1/6
Cut lotus root into 0.1cm thick slices. Soak in vinegar water with 1 teaspoon of vinegar in 2 cups of water for about 10 minutes, remove the water, and slice the red onion thinly, soak it in cold water to remove the spicy taste, and remove the water.

Drain the soft tofu on a paper towel and cut it into 1.5cm dice.
STEP 3/6
Wash cherry tomatoes thoroughly, remove the top, and cut them in half. Wash chicory and lettuce, drain, and cut them into bite-sized pieces.
STEP 4/6
Place the white snow nut oil in a pot and heat to 170C to fry the lotus root until golden. Remove from oil and sprinkle with a little salt in a kitchen towel.

Put all the sauce ingredients (2 teaspoon water, 2 teaspoon vinegar, 4 teaspoon sesame, 1/2 tablespoon soy sauce, 2 tablespoon honey, 1 tablespoon rice wine, 1 tablespoon cooking wine, 2 tablespoon lemon juice, 2 tablespoon peanut butter, 4 tablespoon nut oil, salt and pepper) in a mixer and grind finely to make sesame dressing.
STEP 6/6
Put salad vegetables, cherry tomatoes, and soft tofu evenly on a plate, sprinkle sesame dressing, and put lotus root chips on it.
