aromatic fermented mugwort tea
It's one of the easiest ingredients to get in spring. This is mugwort that I collected at a place called Mungyeong with my friend 3 years ago. When I drank mugwort tea after marinating it in sugar, the subtle mugwort scent was touching.

  • Mugwort

Cooking Steps
STEP 1/3
Mix mugwort with sugar and put it in a sterilized bottle one by one and cover it with sugar. Ferment it for two to three years in the shade.
STEP 2/3
Put 1 tablespoon of fermented mugwort into a green tea filter, pour hot water, and let stand for about 5 minutes.
STEP 3/3
When the time comes, remove the filter. I used a coffee filter.
The water temperature used to make fermented mugwort tea should be set on fire just before the water boils.If the temperature is too hot, the fermented ingredients will disappear.
