Cucumber radish kimchi
Cucumber is crunchy and delicious these days. I was preparing the seasoning to make kimchi, but I wanted to eat it quickly, so I made the cucumber radish kimchi first. It's easy and simple to make, so it's great to leave a little bit of kimchi seasoning or make kkakdugi with cucumber or radish when you have enough. The crunchy texture is good and cool, so the rice tastes better because of this.

  • Cucumber

  • Water
  • Red pepper powder

  • salted anchovies

  • Salt

  • a glue for kimchi glue

  • Sugar
    1TS
  • Garlic
  • Ginger
  • leek
Cooking Steps
STEP 1/5
Cut cucumbers into circles and soak them in salt water. Cut the shape to suit your taste.

Add the above ingredients and make the seasoning.

Drain the well-pickled cucumber and add the seasoning

Mix it evenly.

It's so easy to make cucumber kimchi because you just have to mix it if you make the sauce while you're marinating cucumber. Cucumber is delicious because it is hard when the seed is pickled well. If you eat it as soon as you make it, the cucumber doesn't get seasoned, so it's better to cook it a day later. The cucumber radish kimchi was cool and crunchy, so I had a good appetite.
