Lotus root salad
Lotus root salad is what you usually get when you go to a Korean restaurant. The crunchy taste. I think lotus root salad is the best out of all the lotus root dishes. Sesame dressing, black sesame dressing, or perilla seeds are usually used for the sauce, and all ingredients are delicious. You can just add lotus roots, or if you have other vegetables at home, you can add broccoli, olives, and salmon crab meat like me. There are many main ingredients for salad sauce, but it is rare to taste as savory and delicious as mayonnaise. If you grind sesame seeds, perilla seeds, and black sesame seeds in mayonnaise and season them with vinegar, sugar, and salt, the really delicious salad dressing is completed.

Cooking Steps
STEP 1/7
The lotus root is clean inside only if you buy the one with a blocked end blocked. I also prepared broccoli, olives, and crab sticks. Korean table d'hote uses lotus root only, but it tastes better with vegetables at home.

Peel the lotus root and cut it 3mm thick.

When blanching lotus roots, put 1 tablespoon vinegar in boiling water, blanch it for 3 to 4 minutes, rinse it in cold water, and drain it. If you use vinegar to blanch lotus roots, the color becomes white. Lotus root is a vegetable that is prone to browning, but it is not good to see when the color changes.

Remove the broccoli, blanch slightly with salt in boiling water, and rinse in cold water.

Grind black sesame, sesame and perilla seeds finely in a blender. I added the ingredients and made black sesame dressing.

Eat salad with as much sauce as you want. If you don't finish it at one meal after putting a large amount on it, you can't eat vegetables because they lose their original color and have water. Season as little as you can.

The crunchiness of lotus roots, broccoli, and salmon crab meat go very well with the black sesame sauce. Make enough and season little by little at each meal. I think it would be great to put spring dong and rapeseed vegetables that are just coming out in the black sesame dressing and season them with salmon crab meat.
