STEP 1/11
Wash one squid in running water and prepare it.

Starting from the head, peel off the squid all at once.

Draw a zigzag diagonal line inside the squid and cut it

Prepare the chives and remove the ends little by little. (It is better to cut the ends to allow air to flow as the chives swell later on.)

Add 1 spoon of salt to boiling water.

Put in the green onions first and blanch them. Blanch the head of the chives for 3 seconds first, then put them all in, and when the chives swell, turn them over once and take them out right away.

Blanch the chives, take them out, and put the squid in the water and blanch them for 1 minute and 30 seconds.

Rinse the blanched chives and squid in cold water and then place them on a strainer tray to remove the water.

When the squid cools to a certain extent, cut it into appropriate sizes.
STEP 10/11
Roll the center of the cut squid with blanched chives. Start with the head of the green onion and roll it.. It adheres on its own due to moisture.

The finished squid raw fish fillet!!!!!!!!!
The chewyness of squid and the crunchiness of chives are a fantastic combination.
When you prepare squid, put a milk carton on the cutting board~
It's comfortable to prevent the fishy smell from seeping into the cutting board.
