STEP 1/19
Please prepare the ingredients.
STEP 2/19
(Only use the left side. Right side meat for broth)
Put sea salt in water and boil the meat to make broth. Meat impurities are boiled by removing them from time to time. (About 30 minutes)
STEP 3/19
Add egg whites and a little salt to 2.5 cups of flour (Bon Recipe = 2 cups of flour + 0.5 cups of soybean flour). (Put the egg yolk separately)
STEP 4/19
Beat the dough to a viscosity that does not stain your hands, and let it sit for 30 minutes.
STEP 5/19
Chop zucchini, chop garlic and green onion. (Use only green scallions)
STEP 6/19
Break 1 egg yolk and 1 egg and mix well.
STEP 7/19
In a wide pan, fry the egg garnish thinly. Add a bit of salt. Let cool for a while when finished.
STEP 8/19
Add all the chopped green onions + 1 red pepper powder + 0.5 minced garlic + a little ginger for the sauce, then scoop up a little meat broth in the pot.
STEP 9/19
Mix it well. You can season it slightly to your taste.
STEP 10/19
Stir-fry shredded zucchini.
STEP 11/19
Remove the beef from the broth and chop it into small pieces.
STEP 12/19
When all the ingredients are ready, get ready to make kalguksu noodles.
STEP 13/19
Sprinkle flour well to prevent the dough from sticking, and roll it thinly with a rolling pin.
STEP 14/19
Fold it 2-3 times and cut it with a knife.
STEP 15/19
Untie the cut side one by one.
STEP 16/19
Shake off the flour and put it in boiling water.
STEP 17/19
Loosen well so that it doesn't get tangled.
STEP 18/19
Raw noodles do not take long to cook, so check them often, and when they are cooked, put them on a sieve to remove moisture.
STEP 19/19
Put the noodles and broth in a bowl and put the prepared garnish on top of it.
It is good to season each ingredient little by little. If you want a spicy taste, you can add Cheongyang red pepper, or you can add more red pepper powder and complete the seasoning.
