Cooking Steps

Please make sticky rice paste first. Add 4 cups of water to 1 and a half cups of glutinous rice flour, whisk evenly, and boil while stirring constantly. It's getting more and more concentrated like porridge, and when a big bubble pops, it's done. When viscosity begins to form over high heat, reduce the heat and stir. If you're in a hurry, put cold water in a bowl, grind cold water, and leave it in a medium-hot water to cool it down quickly. This amount is a lot because it goes into kimchi and geotjeori.

I'm going to make kimchi and fresh kimchi at the same time. Drain the pickled cabbage for about 3 hours. It's always good to turn the cabbage upside down and drain it. I put one head straight to show it to the cabbage.

Cut the roots of pickled cabbage first.

And cut it sideways. The equivalent varies depending on the size of the cabbage leaf. There's also a way to cut cabbage leaves in half lengthwise and divide them into 2-3 pieces. The important thing is to cut the leaves and stems together.

Wash the red pepper clean and cut it into pieces. Peel the ginger and cut it to make it easy to grind. Pour 1 cup of sand lance extract and grind it. Fish sauce can be anchovy fish sauce. You may mix salted shrimp.

Put the ground seasoning in a large bowl and add 1 cup and a half of red pepper powder, 3 ladles of glutinous rice paste (large ladle), 2 tablespoons of minced garlic, 1 tablespoon of plum extract, and 1 tablespoon of salt.
