Hot and thick aged pork back-bone stew
I've been introducing chicken recipes for a while, but I feel a little bored, so I'm going to put them aside for a while. It's raining in autumn yesterday and today. It's going to rain next week, so it reminds me of hot and spicy pork back-bone stew. The backbone is very cheap, so if you cook it at home, it's very plentiful. If you use ripe kimchi, you can easily taste it and the cool taste is excellent. Next time, I will introduce a recipe that really tastes like gamjatang with perilla powder and potatoes :)

Cooking Steps
STEP 1/7
Soak the backbone in cold water to drain the blood. In the case of refrigerated meat, 30 minutes to an hour is enough, and in the case of frozen meat, it is defrosted by losing three to four hours.
While the blood is drained, gather and boil the ingredients that can remove the smell of garlic, green onion roots, ginger, etc. at home. I used a handful of garlic and some ginger.

Remove the blood from the blood and boil the well-washed backbone for about 10 minutes to remove impurities and smell, then take it out and wash it in cold water.

Drain the blood and prepare the seasoning while boiling. Mix 1 tablespoon of red pepper paste, 5 tablespoon of red pepper powder, 3 tablespoon of soybean paste, 1 tablespoon of soy sauce, and a little minced garlic.

I will wash the ripe kimchi and soak it in water for a while. I prepared a fully cooked radish that I don't usually eat.

Add the meat, seasoning, and water and bring to a boil.

When it boils, put the washed ripe kimchi on top and boil it more together.

Boil it over medium heat. Until the meat on the bones is tender. All you have to do is wait patiently. It was perfect to boil for about three or four hours.
You can enjoy it with noodles such as ramen and dumplings :)
