I bought thick bean sprouts for steaming. If you mix this steamed bean sprout, it's thick and the texture seems to be good.

Rinse them in cold water three or four times to remove the pods. If you clean the pods and rinse them, it takes too much work, so it's convenient to just rinse them in water.

Place it on a sieve to remove moisture.

Boil bean sprouts, and if you add salt, the bean sprouts will be thinner due to osmotic pressure, so it is better to boil them in plain water. Add only the top of the bean sprouts so that it doesn't soak slightly. And boil it for about 10 minutes.

Close the lid. (It's thick bean sprouts, so you have to boil them for 10 minutes.) There are two ways to boil bean sprouts here. Put it in cold water and boil it with the lid closed, or put it in boiling water and boil it with the lid open from top to bottom. If you use both of these methods, both do not smell like bean sprouts. Therefore, when boiling with the lid closed, be careful because it will smell fishy if you open the lid in the middle. Don't forget to boil cold water with the lid closed from beginning to end.

Cool the drained bean sprouts in a sieve and put them in a large bowl.

Soak chives in cold water for about 5 minutes and rinse them in cold water three or four times when the foreign substances sink. Instead of trimming chives one by one, soak them in water, stand them up, hold them with both hands, shake them in the water, and rinse them three or four times.

Drain on a sieve.

Use only one handful and refrigerate the rest.

I cut it about 3cm in length, but you can cut it into 5cm.

Add minced garlic, sugar, salt, white pepper, red pepper powder, sesame seeds, and sesame oil. Sugar acts as a seasoning. Please refer to the correct recipe above. If you mix it like this in advance, the seasoning won't get concentrated when you mix it, so the seasoning will be evenly distributed.

Add sesame seeds. This was the national side dish, seasoned chives and bean sprouts.
To choose a good bean sprout, choose one with plump stems, no fine roots, and no softness.
For storage, put water in an airtight container, put bean sprouts, and store them with the lid closed. If you change the water every day, it can be stored for a week.
