Wash the blue crab cleanly under running water using a brush, remove the lid, sandbags, and gills, and divide it into four equal portions.

Grease a deep pan with plenty of oil, raise the oil temperature to 160 degrees, fry minced garlic until golden brown, and drain from kitchen towels. Turn the garlic oil to 180 degrees Celsius, fry the starchy blue crab until it is cooked to the core, drain the oil from the kitchen towel, and fry it again to make it a little more crispy.
