Cooking Steps
STEP 1/6
Shake off a root of lotus root and wash it well.
STEP 2/6
Peel off the skin and slice it thinly
Get rid of the black foreign substance stuck between the holes.
STEP 3/6
Blanch 1 tablespoon vinegar and 1 tablespoon salt in a pot within 1 minute.
STEP 4/6
While blanching, add 200ml of water, 100ml of citron syrup, 100ml of vinegar, and a teaspoon of salt and mix.
STEP 5/6
Shower blanched lotus roots in cold water and remove moisture.
STEP 6/6
Put lotus root in citron sauce and let it ripen in the refrigerator for a day, and it's done
