Japanese fried tofu ((),)
Ageda Shidofu is one of my favorite dishes when I go to Izakaya It's easy to make, so I often make it at home! It is much softer and more delicious to use soft tofu like stew than tofu for frying. A dish that becomes much simpler when you use commercial tzuyu, which is always stored in the refrigerator.

Ingredients
  • Tofu
    300g
  • potato starch
    4T
  • Cooking oil
  • Radish
  • leek
  • dried bonito
  • Tzuyu
    2T
  • Water
    8T
  • Sugar
    1/4t
Cooking Steps
STEP 1/11
Throw away the water in the package,
STEP 2/11
Wrap it in a kitchen towel and let it drain.
About 10 minutes.

In the meantime, grind the radishes on a grater,

I chopped up the green onions.
STEP 5/11
Wipe off the excess water with a kitchen towel and cut the tofu into appropriate sizes,
The smaller you cut, the more starch you need.

Put starch on a plate and roll the tofu with starch,
I choose how to shake it in a plastic bag.

Like this, coat the six sides evenly.

After heating the oil, add frying chopsticks and when the temperature becomes bubble
Reduce heat to medium and add tofu.

Roll around and cook all six sides.
Of course, if you use more oil, you don't have to fry it while rolling it.

Put tofu in a deep dish and put the dried radish (Daikong Orosi) on it.

Pour in the sauce, put katsuobushi and chopped green onions, and it's done!
Depending on your preference, you can add ground ginger little by little or shred unseasoned seaweed.
