The first thing to do is soak rice noodles in water for about 30 minutes in advance.
You can soak it in water and stir-fry it on fire to feel the chewy texture.

Before we start trimming the ingredients,
Beef + soy sauce (0.5T) + sugar (1T) + rice wine (0.5T)
Mix them together and season,
Next, trim the ingredients.
Chives: Cut into 5cm lengths
Garlic: Shredding
Green onion: Cutting diagonally
Onion: Shredding
Bean sprouts: Wash and scoop it out

In a medium heat pan, stir-fry [beef + garlic (1 grain) + onion (a little bit) + green onion (a little bit).

Put rice noodles that have been soaked in water,

Stir-fry rice noodles until they are soft.
STEP 6/9
Mix anchovy sauce (1.5T) + sugar (0.5T) + soy sauce (0.5T) in advance, sprinkle and mix.

Add the chopped chives,

Add bean sprouts,
STEP 9/9
and mix it together. That's it!
I added more sugar to make it sweeter.

You know what? Pad Thai is not a traditional Thai food, but rather a food that the government recommended and developed to revitalize the economy and encourage rice consumption.
Right now, it's Thailand's signature food in name and reality. ^^*
