STEP 1/11
First, wash the most important branches thoroughly and cut off the head and tail.

Cut the eggplant diagonally. Cut it diagonally, turn it around, and cut it diagonally again. Repeat and cut the eggplant.

Prepare vegetables and mushrooms for stir-fried eggplants.
We put mushrooms, canned bamboo shoots, bok choy, red pepper, green pepper, and paprika, so you can use the vegetables in the refrigerator. It doesn't have to be the ingredients!!!

If you just stir-fry the eggplant, it becomes mushy, so you have to fry it once.
That way, you can taste the crunchy and chewy eggplant.

Fry slightly in heated oil.
If you fry it in enough heated oil, it comes up right away, and if you take it out after a minute, it becomes crispy fried eggplant ^^

If you fried the eggplant, put it in a strainer and drain it!!!
After frying all the frying, you have to drain the oil through a tight filter to keep the remaining oil from seeping in and keeping it crispy.
STEP 7/11
Shall we officially start making stir-fried eggplants now!!!
First, I put the chili oil that I made and stored in the pan, and here is the spicy pepper!! Add rat-dung peppers or peperocino and stir-fry them.
STEP 8/11
If it has a spicy scent and is well-fried, add all kinds of vegetables and stir-fry them.

Add the last fried eggplant and stir-fry it with the stir-fried vegetables and mushrooms.

I'm going to season it to the end.
Season with oyster sauce.
You can only season it with oyster sauce here, but if you want to add more flavor, add 1t of sugar and it will taste more delicious.
STEP 11/11
If the oyster sauce is mixed well and it's all stir-fried
Add the last two drops of sesame oil and mix it, then turn off the heat to complete the spicy and crunchy eggplant stir-fry of chili oil.
If you fry eggplants once, you can save the crunchy texture of the eggplant and add sesame oil at the end of the stir-fry!!!
And you have to turn off the heat right away to make the scent of sesame oil alive.
