STEP 1/8
At the night snack bar, I used the water kimchi that Shim Young-soon made herself, but since I don't have it, I use the ingredients at home. I used the well-cooked kimchi soup that I made last year Use a ladle to scoop two ladles and strain them
STEP 2/8
Grind the watermelon roughly in a blender.
STEP 3/8
Prepare white kimchi (or washed ripe kimchi), cucumber, and pear for garnish.
STEP 4/8
Put the noodles in boiling water, and when it boils, pour cold water and cook it, and I will make the soup in between
STEP 5/8
Mix the kimchi soup, white kimchi soup, and the ground watermelon well, and cut the watermelon and put it in. Add red pepper paste and soy sauce to season it. Each restaurant has a different flavor, so adjust the amount while adding it.
STEP 6/8
In the meantime, I will quickly rinse the well-boiled noodles in cold water and season them. Season with sesame oil, salt, and soy sauce,
STEP 7/8
Put the noodles in a bowl and add the kimchi soup
STEP 8/8
Garnish it and it's done. I knew for the first time that sweet watermelon and ripe kimchi soup go so well together. It's natural sweetness even without sugar, so it has a clean aftertaste. It's not too much to eat as a late night snack It's a taste that deserves to go to the Hall of Fame
- If you have water kimchi at home, you can use it, or if you don't have it, you can use kimchi soup, or you can use commercial cold noodle broth.
- If you put in a lot of kimchi, it tastes better and the stomach is sweet, so please add a little bit.
- Even if you don't have Korean melon, I think it'll be really good if you just add kimchi and cucumber garnish.
