First, soak the lemon in water.

Sprinkle the baking soda that I prepared first. Scrub the lemon with baking soda. Use the skin to make lemon syrup, so rub it carefully. Then wash the washed lemon and remove the water

Prepare the thick salt. Likewise, do your best to rub. And wash it with water. And then drain it! Please wipe it off.

Roll the lemon in slightly vinegar-burned boiling water for 10 to 15 seconds. Then rinse with water again and remove the water!

Remove the top from both sides of the lemon.

Prepare a 1:1 ratio of lemon and sugar. Usually, lemon and sugar are layered, but I mixed it like this once.

Sprinkle the remaining sugar on the gel, cover it, and store it on a veranda where the cool sun is not shining, stir it up and down in the evening, stir it again in the morning, and refrigerate it in a sterilized glass bottle around the afternoon.
Lemon seeds have a bitter taste, so you have to remove them.
