Cooking Steps
STEP 1/5
Garlic is served from April to August every year. I personally make garlic jjangchi with fresh garlic from April to early May.
STEP 2/5
I have to peel the garlic. It's hard to peel garlic, but it's never hard to make it. If I use whole garlic, I have to boil soy sauce horse, but this is annoying, and it's uncomfortable to cut it when I eat it, so I peel it and make it.
Wash the peeled garlic clean and put it in a strainer and dry it. It gets dry in about half a day.

Disinfect the glass bottle for garlic. Put cold water in a pot and boil it for about 10 minutes. Take it out on a drying rack and dry it. You have to boil the glass bottle in cold water from the beginning so that it won't break.
STEP 4/5
Place dried garlic in a dry glass jar and add water 1: sugar 1: vinegar 1 and cover. Please remember the total amount of water, sugar, and vinegar. e.g. 100ml of water + 100ml of sugar + 100ml of vinegar = 300ml in total
Leave it in a cool place where there is no sunlight for 10 days and remove the Arin flavor from the garlic.
STEP 5/5
After 10 days, throw away 1/3 of the water and add as much soy sauce as you throw away. For example, one-third of 300ml is 100ml, so throw away 100ml and add 100ml of soy sauce. Leave it at room temperature for 2 weeks, put it in the refrigerator and eat it. Don't worry if the garlic still tastes like Arin~~ If you ripen it more after a while, the taste of Arin disappears.
