Green tea ice cream
I made my favorite green tea flavored ice cream. It's a recipe that doesn't have yolk but only milk.

Ingredients
  • Milk
    300g
  • Sugar
    50g
  • Starch syrup
    40g
  • Milk
    100g
  • potato starch
    1Ts
  • green tea powder
    1.5Ts
  • Salt
    little
  • whipped cream
    200g
Cooking Steps
STEP 1/10
Place milk in a pot and add sugar. If you add sugar according to the recipe above, it's not too sweet and it's delicious ice cream.
STEP 2/10
Please add starch syrup, too. Heat milk with sugar and starch syrup over medium heat.
STEP 3/10
Put 100g of milk in a cup and add starch. Add starch to make smooth ice cream
STEP 4/10
Add green tea powder, please. If you want a darker color or flavor, you can add more. Next time I make it, I'll add more for a stronger taste. After adding the powder to the milk, mix well with the milk so that it does not clump.
STEP 5/10
Add the green tea powder mixture to the heated milk and boil it again over medium heat for about 10 minutes to make it a little thicker. It doesn't have to be too thick. It's hard to explain with words that leave a mark when you draw a finger on the ingredients on the spatula while stirring with a spatula. When thickened, remove from heat and cool in ice water in refrigerator.
STEP 6/10
When the green tea milk cools down, whip the whipped cream 70-80%. The condition of the whipped cream needs to be cold so that the foam comes up well.
STEP 7/10
Add whipped cream to the green tea dough and mix well using a whisk or spatula.
STEP 8/10
Place in a suitable container and freeze in freezer. I put it in a large container and the ice cream base didn't freeze well, so I had a hard time. I think it's better to put it in a small container even if you divide it into several containers.
STEP 9/10
Freeze in the freezer, first freeze for 2-3 hours and mix with a fork, then remove once every hour and mix with a fork. Repeat this process about three to four times. That way, the air goes in and it becomes soft ice cream. And when it's completely frozen in the freezer, it becomes ice cream. You can make it without an ice cream maker.
STEP 10/10
When I took it out the next day, the ice cream was so hard that I couldn't help it with a scoop. Leave it at room temperature for a while and scoop it up. I added a bit of green tea powder, so the color is a bit light green. I wanted a dark color. It also comes with a homemade red bean bag that goes well with green tea. The color is not strong, but the taste of green tea is strong. The sweet taste of ice cream and the bitter taste of green tea go well together, so I think I can eat it without any burden.
